Unlike other coffee brews which are essentially little drops of aromatic oils dissolved in water, espresso is an emulsion - and that is what gives it its special thick texture and deep aroma.

Accordingly, the making of espresso is not a simple process. It involves forcing of hot water trough finely ground coffee in a very specific temperature and pressure for a very specific time, with a very narrow margin of error. This is why professional espresso machines are rather expensive, and the making of a real espresso requires a significant level of expertise.
